It's not possible to pick a favourite because they all have their own distinct qualities; how can you pick between a blue, a brie, and a cheddar?
I've had most of those cheeses here, mostly imported, and yum! I haven't had white Stilton though, with or without apricots. Is it like that Danish White Castello cheese which tastes blue? That's delicious. The only Stilton I've had was blue, and one came in a nice stoneware jar which I still have.
I've often said that one food I could never give up is cheese. :)
